Veggie Lasagna

I was going to make this lasagna for Father's Day dinner yesterday but our day trip took a bit longer than anticipated so today it was!  I recently switched to lacto-ovo vegetarian eating and this is the first vegetarian lasagna I've made since the change.  It was amazing!

Essie could not love her daddy more.  She was so pleased and excited this morning to give him the things she had made for him at school and daycare.  I'm not sure how many hugs and kisses he got but it was quite a few!

A shot of the glass sphere hanging in my mom's front window.  I love these things so much.  I broke every single one I owned in a terrible, stupid way when we moved into our new place last year and have been mourning them since.  I would decorate my entire living space in rainbow-hued glass globes if I had them.

This was a pretty delicious dinner!  Roasted lemon and garlic broccoli with macaroni and cheese, all from scratch.  Here's a little before and after to show you how much I enjoyed it.
